Il s&rsquo;agit de Horst Petermann du Kunststuben, \u00e0 K\u00fcsnacht (ZH), et de G\u00e9rard Rabaey du Pont de Brent, \u00e0 Brent (VD). Leurs clients les regretteront: tous deux ont atteint depuis bien des ann\u00e9es le sommet de ce que la gastronomie helv\u00e9tique \u00e0 de mieux \u00e0 offrir. Mais tous deux ont pris soin de former leurs successeurs, Rico Zandonella \u00e0 K\u00fcsnacht et St\u00e9phane D\u00e9cotterd \u00e0 Brent. Le 19\/20 n&rsquo;est cependant pas \u00abh\u00e9r\u00e9ditaire\u00bb, c&rsquo;est pourquoi nous avons mis la note de ces deux \u00e9tablissements entre parenth\u00e8ses. La ligue des champions des 19\/20 s&rsquo;en trouve alors r\u00e9duite \u00e0 six: Philippe Rochat, \u00e0 Crissier (VD), Bernard Ravet, \u00e0 Vufflens-le-Ch\u00e2teau (VD), Philippe Chevrier, \u00e0 Satigny (GE), Didier de Courten, \u00e0 Sierre (VS), Andr\u00e9 Jaeger, \u00e0 Schaffhouse, et Andreas Caminada, \u00e0 F\u00fcrstenau (GR).&nbsp;&nbsp;<\/p>\n\n\n\n<p><strong>Un cuisinier d&rsquo;exception pour un h\u00f4tel d&rsquo;exception<\/strong><\/p>\n\n\n\n<p>D&rsquo;origine allemande, Peter Knogl, 42 ans, est le \u00abCuisinier de l&rsquo;ann\u00e9e\u00bb 2011, avec 18 points. Il \u00e9merveille son public \u00e0 l&rsquo;H\u00f4tel Les Trois Rois, \u00e0 B\u00e2le, l&rsquo;un des plus beaux h\u00f4tels de Suisse, propri\u00e9t\u00e9 de Thomas Straumann. Dans le cadre \u00e9l\u00e9gant du Restaurant Cheval Blanc, le chef se concentre sur une cuisine fran\u00e7aise de tradition qu&rsquo;il signe par une \u00e9tonnante l\u00e9g\u00e8ret\u00e9 et un recours \u00e0 des sauces intenses. La brigade de service n&rsquo;est par ailleurs pas \u00e9trang\u00e8re au succ\u00e8s de l&rsquo;\u00e9tablissement. Dans cette \u00e9dition, deux chefs font leur entr\u00e9e dans la cat\u00e9gorie des 18\/20. Il s&rsquo;agit de Martin G\u00f6schel du Paradies, \u00e0 Ftan (GR), et de la star fran\u00e7aise Anne-Sophie Pic, avec qui collabore son talentueux chef Guillaume Raineix qui la seconde aux fourneaux du somptueux Beau-Rivage Palace, \u00e0 Lausanne.&nbsp;<\/p>\n\n\n\n<p><strong>L&rsquo;ann\u00e9e des d\u00e9couvertes<\/strong><\/p>\n\n\n\n<p>En continuelle qu\u00eate de nouveaux talents, notre \u00e9quipe a travaill\u00e9 sans rel\u00e2che dans le courant des douze derniers mois. A l&rsquo;\u00e9vidence, les gastronomes n&rsquo;ont pas de soucis \u00e0 se faire pour l&rsquo;avenir: la rel\u00e8ve arrive en force. Il y a une ann\u00e9e Andreas Caminada obtenait son 19e point, for\u00e7ant l&rsquo;admiration par son travail autant que par la d\u00e9contraction avec laquelle il poursuit sa route sous le feu des projecteurs. Si nous n&rsquo;avons pas de nouveau Caminada \u00e0 vous pr\u00e9senter cette ann\u00e9e, ce ne sont pas les talents qui manquent. Mais Fr\u00e9d\u00e9rik Kondratowicz, \u00e0 l&rsquo;H\u00f4tel de Ville \u00e0 Fribourg, ainsi que Ambrogio Stefanetti, au Vecchia Osteria Seseglio, \u00e0 Chiasso-Seseglio, obtiennent tous deux 16\/20. Ils seront nos \u00abPromus de l&rsquo;ann\u00e9e\u00bb respectivement en Suisse romande et au Tessin. Lionel Chabroux du Relais Mi\u00e9gois, \u00e0 Mi\u00e8ge, pr\u00e8s de Sierre, obtient 14\/20 et sera notre \u00abD\u00e9couverte romande de l&rsquo;ann\u00e9e\u00bb. Tobias Funke, 28 ans, du Funkes Obstgarten, \u00e0 Freienbach (SZ), est quant \u00e0 lui le \u00abPromu al\u00e9manique de l&rsquo;ann\u00e9e\u00bb, avec 16 points. Nenad Mlinarevic, 28 ans &#8211; \u00e9l\u00e8ve de Caminada -, du Neue Blumenau, \u00e0 L\u00f6mmenschwil (SG), et Pascal Schmutz, 26 ans, chef du Vitznauerhof et de son Restaurant Sens, \u00e0 Vitznau (LU), obtiennent tous deux 15 points; ils seront les \u00abD\u00e9couvertes al\u00e9maniques de l&rsquo;ann\u00e9e\u00bb. Sasha Berther, 28 ans (Moospinte, \u00e0 M\u00fcnchenbuchsee,15\/20), Christian Nickel, 28 ans (Rigiblick, \u00e0 Zurich, 16\/20) et Marco Hartmann, 28 ans (Greulich, \u00e0 Zurich, 15\/20) ont pris la succession de grands chefs, tous avec succ\u00e8s. Au Viva d&rsquo;Oberwil (BL), Eric Schr\u00f6ter, 46 ans, a retenu toute notre attention: ce chef d\u00e9j\u00e0 \u00e9toil\u00e9 en Hongrie entre dans la course avec 16 points d&#8217;embl\u00e9e.&nbsp;<\/p>\n\n\n\n<p><strong>Nadine et sa brigade de 100 hommes<\/strong><\/p>\n\n\n\n<p>Quatre autres distinctions sont attribu\u00e9es \u00e0 des h\u00f4tels de renom. L&rsquo;une au Japon, au Park Hyatt Tokyo, o\u00f9 Nadine W\u00e4chter Moreno, notre \u00abD\u00e9couverte de l&rsquo;ann\u00e9e\u00bb en 2006, est \u00e0 pr\u00e9sent Executive Chief \u00e0 la t\u00eate de 100 cuisiniers, dont 95 sont Japonais. L&rsquo;Eden Roc d&rsquo;Ascona est \u00abH\u00f4tel de l&rsquo;ann\u00e9e\u00bb 2010, notamment gr\u00e2ce \u00e0 ses trois chefs qui totalisent 44 points. A Gen\u00e8ve, Jean-Christophe Ollivier veille sur une cave valant des millions: le chef sommelier de l&rsquo;H\u00f4tel Beau-Rivage est aussi notre \u00abSommelier de l&rsquo;ann\u00e9e\u00bb. Pour r\u00e9compenser Hans Peter Julen, propri\u00e9taire de l&rsquo;Alpenhof \u00e0 Zermatt, d&rsquo;avoir install\u00e9 unsuperbe smoker&rsquo;s lounge, nous le nommons \u00abCigarMan of the Year\u00bb.&nbsp;<\/p>\n\n\n\n<p><strong>835 restaurants: plus que jamais!<\/strong><\/p>\n\n\n\n<p>Les 45 collaboratrices et collaborateurs ont eu la main heureuse durant cet an 1 apr\u00e8s la crise: le GaultMillau 2011 recense 835 restaurants et 100 h\u00f4tels, soit plus que jamais! Ainsi, 100 cuisiniers ont \u00e9t\u00e9 d\u00e9couverts, 92 ont vu leur note grimper, alors que 42 ont perdu un point. Neuf adresses sont sorties de nos pages, soit pour cause de fermeture, soit parce que leur prestation ne correspondait plus \u00e0 nos crit\u00e8res.
