Pr\u00e8s de six ans plus tard, ce joyeux Tessinois tutoie les sommets: le&nbsp;<em>GaultMillau<\/em>&nbsp;l\u2019honore du titre de \u00abCuisinier de l\u2019ann\u00e9e\u00bb 2017 avec 18 points. Urs Heller, r\u00e9dacteur en chef du&nbsp;<em>GaultMillau<\/em>&nbsp;Suisse: \u00abRico nous a souvent \u00e9blouis. Il a reconfigur\u00e9 la carte, rajeuni le concept du restaurant et abaiss\u00e9 les prix. Oublions le temple de la gastronomie: son restaurant est enti\u00e8rement d\u00e9di\u00e9 \u00e0 l\u2019art de vivre contemporain. Seul \u00e9l\u00e9ment qui perdure: les exigences du chef et de sa petite brigade, qui mettent la barre haut. Ici, la cuisine est aussi audacieuse que pr\u00e9cise. Rico Zandonella est un chef en id\u00e9ale ad\u00e9quation avec son temps.\u00bb<br><br>Et que se passe-t-il \u00e0 Crissier? C\u2019est sans doute la question la plus fr\u00e9quemment pos\u00e9e au cours des derniers mois dans les cercles de gourmets. Apr\u00e8s Fr\u00e9dy Girardet, Philippe Rochat et Beno\u00eet Violier, Franck Giovannini sera-t-il le quatri\u00e8me grand chef de ce restaurant d\u2019envergure plan\u00e9taire? Pour Urs Heller, r\u00e9dacteur en chef de&nbsp;<em>GaultMillau<\/em>&nbsp;Suisse, \u00abGiovannini est remarquable. Nous lui avons rendu visite \u00e0 plusieurs reprises au cours des saisons et nous n\u2019avons pas le moindre doute: nous lui attribuons la note maximale, 19\/20\u00bb. Une cons\u00e9cration sans tambours ni trompettes, cependant, par respect pour son ami et pr\u00e9d\u00e9cesseur, Beno\u00eet Violier, qui nous a quitt\u00e9s en janvier.<br><br><strong>Le \u00absix-pack\u00bb des 19\/20<\/strong><br>Six cuisiniers helv\u00e9tiques constituent le peloton de t\u00eate de la gastronomie suisse avec 19 points: Andreas Caminada (Schauenstein \u00e0 F\u00fcrstenau, GR), Peter Knogl (Les Trois Rois \u00e0 B\u00e2le), Bernard Ravet (L\u2019Ermitage de Bernard Ravet \u00e0 Vufflens-le-Ch\u00e2teau), Philippe Chevrier (Domaine de Ch\u00e2teauvieux \u00e0 Satigny, GE), Didier de Courten (Terminus \u00e0 Sierre) et Franck Giovannini (H\u00f4tel de Ville \u00e0 Crissier). Leur prestation est \u00e9blouissante, leur niveau incontestable et ils se profilent tous en excellents formateurs de la rel\u00e8ve.<br><br><strong>Eperon, Suter, Bertarini, B\u00e4chler: les \u00abPromus de l\u2019ann\u00e9e\u00bb<\/strong><br>En Suisse romande, c\u2019est une fois de plus un cuisinier fribourgeois qui grimpe sur le podium en tant que \u00abPromu de l\u2019ann\u00e9e\u00bb. Il s\u2019agit d\u2019Alain B\u00e4chler (Restaurant des Trois Tours \u00e0 Fribourg-Bourguillon) qui obtient son 18e point. Au Tessin, le&nbsp;<em>GaultMillau<\/em>&nbsp;d\u00e9cerne le titre \u00e0 Andrea Bertarini (Conca Bella \u00e0 Vacallo), avec 17 points. Toujours au Tessin, Othmar Schlegel (Castello del Sole, Ascona) prend sa retraite: la \u00abToque d\u2019honneur\u00bb lui revient en qualit\u00e9 de meilleur cuisinier tessinois.<br>En Suisse al\u00e9manique, il y a deux \u00abPromus de l\u2019ann\u00e9e\u00bb obtenant chacun 18 points: le Vaudois Laurent Eperon, discret mais audacieux, r\u00e9invente la cuisine classique au Baur au Lac, \u00e0 Zurich: le voici applaudi pour ses ann\u00e9es d\u2019efforts continus. Felix Suter (Schl\u00fcssel \u00e0 Oberwil, BL), de son c\u00f4t\u00e9, prouve qu\u2019une petite brigade ne disposant d\u2019aucun sponsor peut atteindre le sommet, sans carte qui plus est! Apr\u00e8s des ann\u00e9es \u00e0 Fl\u00fch, il a atteint le succ\u00e8s dans son nouveau restaurant aux portes de B\u00e2le.<br><br>Et c\u00f4t\u00e9 \u00abD\u00e9couvertes de l\u2019ann\u00e9e\u00bb Romain Paillereau, le chef de l\u2019idyllique Pinte des Mossettes \u00e0 Cerniat (FR), obtient d\u2019embl\u00e9e 16 points. Idem pour le Lucernois Silvio Germann, qui dirige la premi\u00e8re filiale d\u2019Andreas Caminada, l\u2019Igniv, au Grand Resort Bad Ragaz.<br><br><strong>Une femme de talent et 100 vignerons suisses<\/strong><br>Le jury du vin de&nbsp;<em>GaultMillau<\/em>&nbsp;n\u2019a pas ch\u00f4m\u00e9. Comme \u00abSommelier de l\u2019ann\u00e9e\u00bb, il a d\u00e9sign\u00e9 Adriana Novotn\u00e1 du Grand Hotel Kronenhof, \u00e0 Pontresina (GR). Et il tient \u00e0 honorer les remarquables vignerons que sont les Valaisans Axel et Jean-Fran\u00e7ois Maye qui entrent dans le cercle des \u00abIc\u00f4nes\u00bb. Quant \u00e0 la meilleure carte des vins suisses, c\u2019est celle de Stephan Nitzsche, du restaurant Einstein Gourmet, 17\/20, \u00e0 Saint-Gall. Pour la quatri\u00e8me fois, le&nbsp;<em>GaultMillau<\/em>&nbsp;publie la liste des 100 meilleurs vignerons suisses.<br><br>Quant aux fumeurs de cigare \u00e9picuriens, c\u2019est \u00e0 B\u00e2le que nous leur donnons rendez-vous, dans le cadre flatteur du Grand H\u00f4tel des Trois Rois.
