Voil\u00e0 un homme qui a du cran ! Entrepreneur et financier, Jan Schoch est originaire de la r\u00e9gion appenzelloise \u00e0 laquelle il est profond\u00e9ment attach\u00e9. Au point qu\u2019il s\u2019y est fait h\u00f4telier. D\u2019abord, il est tomb\u00e9 sous le charme du \u00ab B\u00e4ren \u00bb \u00e0 Gonten AI, une auberge vieille de plus de 400 ans. C\u2019est ici que ses parents s\u2019\u00e9taient mari\u00e9s. Et c\u2019est ici que se trouve \u00e0 pr\u00e9sent la cl\u00e9 d\u2019une r\u00e9ussite h\u00f4teli\u00e8re extraordinaire. Comme le \u00ab Huus B\u00e4ren \u00bb \u00e9tait trop petit, le \u00ab Huus L\u00f6wen \u00bb l\u2019a rapidement rejoint. L\u2019an dernier, Jan Schoch a ainsi ouvert le \u00ab Huus Quell \u00bb, un boutique h\u00f4tel d\u2019une discr\u00e8te \u00e9l\u00e9gance, construit en madriers massifs, en bois local et durable, offrant au plus petit canton de Suisse, un vaste complexe au rayonnement international.\u00a0<\/p>\n\n\n\n

    Pour devenir l\u2019\u00ab H\u00f4tel de l\u2019ann\u00e9e \u00bb du GaultMillau, il faut que son restaurant obtienne au moins 15 points. Chef Michael Gollenz y parvient haut la main: dans le Guide 2027, il fait son entr\u00e9e avec 16 points. C\u2019est sur l\u2019\u00eele croate de Lo\u0161inj que Jan Schoch a d\u00e9couvert cet Autrichien mesurant 1m96 et form\u00e9 aux c\u00f4t\u00e9s de deux chef obtenant chacun 18 points : Christian Kuchler, \u00e0 Wigoltingen (TG), et Stefan Heilemann, \u00e0 Zurich. Il n\u2019a donc pas h\u00e9sit\u00e9 \u00e0 le faire venir en Appenzell. Et il a bien fait, puisque ses premiers menus ont d\u2019embl\u00e9e remport\u00e9 tous les suffrages, notamment gr\u00e2ce au remarquable hommage qu\u2019ils rendent aux produits r\u00e9gionaux. Ainsi ce b\u0153uf de p\u00e2turage appenzellois aux accents mexicains (tartare & carpaccio), cette pintade au ma\u00efs de l\u2019Alpstein accompagn\u00e9e d\u2019une variation de courgette, d\u2019une cr\u00e8me de tournesol et d\u2019une envo\u00fbtante sauce au vin jaune, ou encore cette mousse et cette glace au fromage appenzellois affin\u00e9. <\/p>\n\n\n\n

    Et au petit-d\u00e9jeuner : saucisse appenzelloise ! <\/strong><\/p>\n\n\n\n

    \u00abDans un h\u00f4tel, le petit-d\u00e9jeuner est le repas le plus important de la journ\u00e9e\u00bb, affirme Michael Gollenz.\u00a0Avec ses 18 cuisiniers, il a donc revisit\u00e9 de fond en comble le concept du buffet du matin. Dans la foul\u00e9e, Markus Wetter, le boucher du village, est devenu son meilleur alli\u00e9. Car ici, les produits appenzellois occupent d\u00e9sormais le premier r\u00f4le. Sur la carte des petits-d\u00e9jeuners, l\u2019on d\u00e9couvre ainsi un plat culte de la r\u00e9gion, indissociable de la Landsgemeinde: une portion d\u00e9gustation de la saucisse \u00e0 bouillir appenzelloise IGP et des cornettes au fromage ! Puis il y a le \u00ab pho \u00bb du chef Hung, clin d\u2019\u0153il \u00e0 ses origines vietnamiennes. Il le pr\u00e9pare avec du b\u0153uf appenzellois ou du coq de l\u2019Alpstein et c\u2019est un d\u00e9lice.\u00a0<\/p>\n\n\n\n

    Sept caves \u00e0 vin et un \u00ab Botanicum \u00bb<\/strong><\/p>\n\n\n\n

    L\u2019\u00ab Appenzeller Huus \u00bb ferait un excellent candidat au titre de \u00ab Cave de l\u2019ann\u00e9e\u00bb. Pour la g\u00e9rer, Jan Schoch a engag\u00e9 un grand professionnel. Par reconnaissance faciale, Hans Rhyner acc\u00e8de \u00e0 sept caves totalisant 350 m\u00e8tres carr\u00e9s. Et il veille sur quelque 2100 r\u00e9f\u00e9rences. Que l\u2019un de ces espaces soit la \u00ab Cave suisse \u00bb nous r\u00e9jouit tout particuli\u00e8rement : 135 producteurs de tout le pays y sont repr\u00e9sent\u00e9s ! Le bar de l\u2019h\u00f4tel, baptis\u00e9 \u00ab Botanicum \u00bb, est tout aussi spectaculaire. Le mixologue Elmir Medunjanin y compose les cocktails les plus insolites, n\u2019h\u00e9sitant pas \u00e0 passer une \u00ab Bolo \u00bb dans l\u2019\u00e9vaporateur rotatif. Ses cr\u00e9ations sont tout simplement addictives. De plus, certains des ingr\u00e9dients n\u00e9cessaires \u00e0 ses recettes poussent dans les 144 pots d\u2019un impressionnant mur v\u00e9g\u00e9tal.<\/p>\n\n\n\n
