Ils travaillent pour J\u00e9r\u00e9my Desbraux et Ana\u00eblle Roze \u00e0 la Maison Wenger, juste \u00e0 c\u00f4t\u00e9 de la gare. Toque toujours sur la t\u00eate, sa marque de fabrique, le chef J\u00e9r\u00e9my signe un travail remarquable. Il a compl\u00e8tement r\u00e9nov\u00e9 avec amour son h\u00f4tel-restaurant l\u2019hiver dernier. Il fait confiance aux producteurs de la r\u00e9gion. Il vise la perfection sur tous les plans. Ce n&rsquo;est pas un hasard: le chef a travaill\u00e9 pendant des ann\u00e9es pour Franck Giovannini au c\u00e9l\u00e8bre restaurant de l\u2019H\u00f4tel de Ville de Crissier (VD). Le GaultMillau avait par ailleurs d\u00e9j\u00e0 distingu\u00e9 un \u00abCuisinier de l&rsquo;ann\u00e9e\u00bb au Noirmont: c\u2019\u00e9tait Georges Wenger, en 1997!<\/p>\n\n\n\n<p><strong>7 chefs \u00e0 19 points: les stars au sommet!<\/strong><br>Le \u00abClub des 19\u00bb s&rsquo;est agrandi l&rsquo;ann\u00e9e derni\u00e8re: Marco Campanella a obtenu la note maximale \u00e0 l&rsquo;Eden Roc \u00e0 Ascona (TI), devenant le benjamin des 19 points. A noter qu\u2019il est \u00e9galement r\u00e9pertori\u00e9 avec 19 points dans son lieu de r\u00e9sidence hivernal, le Tschuggen Grand Hotel \u00e0 Arosa (TI). Les six autres membres de ce club sont au sommet depuis plus longtemps: Tanja Grandits (B\u00e2le), Peter Knogl (B\u00e2le), Franck Giovannini (Crissier), Andreas Caminada (F\u00fcrstenau, GR), Philippe Chevrier (Satigny, GE) et Heiko Nieder (Zurich). Le r\u00e9dacteur en chef de GaultMillau, Urs Heller a d\u00e9clar\u00e9: \u00abJ&rsquo;ai rendu visite \u00e0 tous les chefs \u00e0 19 points cette ann\u00e9e encore, et j&rsquo;ai \u00e9t\u00e9 enthousiasm\u00e9 par leur cuisine. Tous sont par ailleurs d&rsquo;excellents formateurs, qui inondent r\u00e9guli\u00e8rement le pays de nouveaux talents.\u00bb<\/p>\n\n\n\n<p><strong>\u00abPromus de l&rsquo;ann\u00e9e\u00bb: Br\u00e4ndli, Koolen, Bedouet &amp; Moresco<\/strong><br>Le guide GaultMillau 2026 est un bon mill\u00e9sime, ce qui se confirme avec nos \u00abPromus de l&rsquo;ann\u00e9e\u00bb. Trois chefs peuvent se r\u00e9jouir de grimper \u00e0 la note r\u00eav\u00e9e de 18 points. Au 7132 Silver, \u00e0 Vals (GR), Marcel Koolen sort de l&rsquo;ombre de ses c\u00e9l\u00e8bres pr\u00e9d\u00e9cesseurs. \u00c0 l&rsquo;Ecco \u00e0 Ascona, Reto Br\u00e4ndli, de retour de Berlin, obtient d&#8217;embl\u00e9e un score \u00e9lev\u00e9. Armel Bedouet (L\u2019Apart\u00e9, \u00e0 Gen\u00e8ve) est notre Promu en Suisse romande. La r\u00e9v\u00e9lation \u00e0<br>Zurich est Dario Moresco: 17 points pour sa cuisine italienne moderne et \u00e9poustouflante!<br>Un autre promu devient \u00abstar suisse \u00e0 l\u2019\u00e9tranger\u00bb: le Saint-Gallois Cyril Bettschen, est le directeur op\u00e9rationnel du Bareiss, un luxueux h\u00f4tel \u00e0 Baiersbronn, o\u00f9 il cuisine dans la For\u00eat-Noire avec son c\u00e9l\u00e8bre mentor Claus-Peter Lumpp.<\/p>\n\n\n\n<p><strong>\u00abD\u00e9couvertes de l&rsquo;ann\u00e9e\u00bb: Str\u00e4uli, Spring, Cl\u00e9ment, Huber, Ghidoni<\/strong><br>Le GaultMillau est toujours \u00e0 la recherche de nouveaux talents dans le pays. Nos d\u00e9couvertes cette ann\u00e9e s\u2019appellent: Valentin Str\u00e4uli de l&rsquo;Igniv \u00e0 Andermatt. Sascha Spring du Seepark \u00e0 Thoune. Sous-cheffe chez Silvio Germann au Mammertsberg \u00e0 Freidorf (TG), Stephanie Mittler est responsable des desserts et des douceurs: nous la nommons \u00abP\u00e2tissi\u00e8re de l&rsquo;ann\u00e9e\u00bb! La \u00abSommeli\u00e8re de l&rsquo;ann\u00e9e\u00bb, la jeune Fran\u00e7aise Charline Pichon, veille \u00e0 Crissier sur l&rsquo;une des plus grandes caves \u00e0 vin de Suisse (40\u2019000 bouteilles!). Quant \u00e0 Evelyn Igl, elle devient notre \u00abH\u00f4tesse de l\u2019ann\u00e9e\u00bb. Elle dirige, avec sa brigade 100% f\u00e9minine, le service au Dolder Grand (19\/20) \u00e0 Zurich, o\u00f9 cuisine son \u00e9poux Heiko Nieder.<\/p>\n\n\n\n<p><strong>Le \u00abGreen Chef of the Year\u00bb: Pascal Steffen<\/strong><br>On cherche en vain des toques vertes dans le GaultMillau. Pour une raison simple: presque tous les chefs r\u00e9pertori\u00e9s dans le guide traitent la nature avec soin, se battent pour des produits de premi\u00e8re qualit\u00e9, et connaissent tr\u00e8s bien leurs fournisseurs. Le vert et la durabilit\u00e9 sont devenus une \u00e9vidence dans le milieu. Nous recherchons avec Bio Suisse le \u00abGreen Chef of the Year\u00bb. Le laur\u00e9at 2026? Pascal Steffen, chef aux 18 points et virtuose du v\u00e9g\u00e9tal au nouveau restaurant Roots, \u00e0 B\u00e2le.<\/p>\n\n\n\n<p><strong>Douze nouveaux chefs \u00e0 17 points<\/strong><br>Douze chefs ont particuli\u00e8rement attir\u00e9 l&rsquo;attention des testeurs et obtenu leur 17\u00e8me point: les trois chefs d&rsquo;h\u00f4tels zurichois Dario Moresco de l&rsquo;Orsini au Mandarin Oriental (\u00abPromu de l&rsquo;ann\u00e9e\u00bb), Marco Ortolani de La R\u00e9serve, et le Japonais Atsushi Hiraoka du Dolder Grand. James Baron au S\u00e4umerei am Inn \u00e0 La Punt Chamues-ch (GR). Flavio Fermi \u00e0 l&rsquo;Ackermannshof \u00e0 B\u00e2le. Marc-Joshua Engel au restaurant Aux Trois Amis \u00e0 Schernelz (BE).
